I'm obsessed with blueberries at the moment! I love having them in protein overnight oats, in smoothies, or even just frozen for a great healthy snack! Not only are these glorious tiny berries low in calories, the health benefits are too good to miss out on. Blueberries are believed to be one of the highest foods in antioxidants, which are essential to protect your body against free radicals, which are basically unstable molecules that can damage your cells and contribute to aging and diseases such as cancer.
These no-bake blueberry and açai energy bites are the perfect boost of energy for your morning. With ingredients such as coconut flakes, nuts and dates, these power energy balls are the perfect morning snack!
You will need a food processor for these, as well as about 200-250g of fresh berries, 50g cashews (optional), 200g oats, 2-3 tsp açai powder, 1-3 medjool dates (finely chopped) for sweetness. Firstly, mash the berries in a bowl. Then, using a food processor, roughly pulse the remaining ingredients but leaving some chunky bits for crunch. Do not rush this process and keep an eye out for the consistency. You want it to be not too dry but not too runny either. If you end up with a very dry mixture, add a few more mashed berries. If it's too runny, add more oats.
If you want to make these into protein bites, you can either swap the oats for a scoop of protein powder or do half oats and half protein.
Measurements aren't too important here. If you go overboard with wet ingredients, just add more dry ingredients to make up for it and vice-versa.
As I create new recipes I will constantly add more of this and that until I achieve the desired final result. Every blender / food processor is different, so use your judgement for these.
Once everything is blended together and you feel like you've got the right consistency, roll the mixture into small balls and put them in the fridge to set. You can then coat them with coconut flakes or shredded coconut, or even chocolate! Let your imagination flow...the sky is the limit!
